Abstract
Having worked from a molecular consideration of food components through to dietary guidance and nutrition practices, this chapter brings the reader through to the broader social and environmental context in which knowledge of food and nutrition is implemented at government and industry levels. At this stage the knowledge will have passed through many filters and is subjected to a range of external forces as it is shaped into the conditions of the actions that need to be taken.
